Our Story

Woodsmoked flavors crafted in the heart of Willow Alaska with rugged Alaskan spirit and bold simplicity.

Willowbilly Smokehouse is a father and daughter partnership dedicated to smoking foods to savory culinary perfection. We’ve been smoking meats and cheeses for a combined fifty years and finally began offering some of these to the public. We smoked meats for our friends, get togethers, church luncheons, and other events where everyone insisted that we start offering these to the public, so we started selling a couple items as side items at the Willow Farmers Market starting in 2023. These sales were a hit and we later changed the business name to Willowbilly Smokehouse to reflect our new business direction.

All of our smoking is done low and slow using only real wood and never any of that phony liquid smoke stuff or pellets. I taught Jessica the art of smoking before she was ten years old and she has since mastered it along with perfecting her own new recipes such as her smoked cream cheese dip and a new blend of pork rub spices that tasted better than my original. She now does all the meat selection, trimming, marinading, and smoking. Jessica has also launched her new line of homemade salsas.

We are both enrolled tribal members and this is a Native owned business.
